Vegan Stuffed Peppers! I made it with Impossible meat, Daiya cheese, peppers, onions, zucchini, corn, cilantro rice and a dollop of vegan sour cream. Its become a new favorite in our house!

Pineapple salmon with guac and a side of broccoli. With a fruit and vegi salad

Pineapple and salmon cooked with a little butter and avocado oil, guac has diced tomatoes, onions, hard boiled egg, lime and a pinch of salt.
Salad had romaine lettuce, tomatoes, carrots, green apples and strawberries

Ground turkey with spinach, on a bed of cottage cheese and topped off with two fried eggs. Skipped on drinking soda and had some LaCroix instead.
